Sugar Crusted Ginger Chewies aka Molasses Cookies

Ginger. Pumpkin. Cloves. Spice. Chai.


All things involving my favorite season...fall. I have been feeling like poo. I have the crud that's going around so since my Mom leaves a good 45 minutes away and I can't have her chicken soup or her crazy logic of me drinking 7up claiming it's a cure all, I've decided to bake.

I will feel better. I don't let a few sniffles get me down. The show must go on. So...here's how I cope. I make myself a big cup of tea and turn on some Pandora jams then hit the pantry to make these Sugar Crusted Ginger Chewies aka Molasses cookies.


You must have sugar in the raw to roll these bad boys in and...ginger. I didn't have ginger so if you don't have it nab it.



We will not talk about the butter consumption. Yep, we won't. We will just enjoy the creamy, fluffy batter without mentioning the 1 1/2 sticks of butter. Nope, we won't even mention it. :)



Can you even resist?? I know I can't. ::drool::



I'm a lazy dough roller. I like big cookies. Then, I don't have to feel like I ate 2 cookies...it was just one. Like my logic?



We won't even talk about why I made these before dinner was prepared. Naughty is what that is. Cookies for dinner anyone? Sounds delightful to me.
I don't know how many family members actually read this blog...I think quite a few but anyway, if you're thinking "wow, Sheree loves to bake!" and are thinking of Christmas (because clearly school has started so every store I go to has Christmas stuff EVERYWHERE). A few things I'm dreaming Santa will bring. Another Cookie Spatula, the most logical Baking Set and if Santa won some sort of lottery and fulfills my wish for the kids' college to be paid for then I most definitely want Santa to think about sticking a Kitchen Aid under my tree. :)

These were super yummy! I especially love the sugar granules that crunch in your mouth. And you are right, it is delish with a cup of tea!
