Momma McMahan said she needed some easy, healthy and yummy recipes with veggies. I was inspired because I'm a true believer in enjoying and eating healthy. I was never much of a salad eater and then discovered some yummy ways to make salad. I've varied the fruit and veggies. Always complimented and enjoyed. Those who know me know I rarely use timers (unless baking) and my idea of measuring it guestimating. Husband seems to think that you need a timer for almost all cooking. I let my nose lead the way. Sometimes it leads to great things other times it leads to disasters. Either way, I am the way I am and I eat and make what I enjoy. I don't make special meals for the kiddies and I have zero tolerance for veggie haters. Eat and be merry is my moto. Have fun.
This dressing goes a long way (maybe 3 salads)
Bagged Argula (I get mine from TJ's $2.29 and it feeds 8 people easily)/Spring Mix/Spinach
Oil (Olive, Canola, whatever you have) 1/2 cup
Evaporated Cane Sugar/White Sugar 1/2 cup (you can use less either way is great)
Apple Cider Vinegar 1/4 cup
White (or Red) Wine Vinegar 1/4 cup
Poppy Seeds/Sesame Seeds (optional) sprinkles
fruit: I've done so many variations-mangoes, strawberries and mandarins, blueberries, cranberries, the list can go on.
Toasted Almonds (throw some Almonds in a pan/saucepan with some sugar and butter saute until toasted)
Throw together and you've got YUM.

Ohhh that salad sounds YUMMY. I'll have to try it. My 5 year old is such the "same thing everyday" eater that it takes me about a month to get her to try something new. (like her father). The other 3, well they'll eat pretty much what you put on there plate. *chuckle*
